- Cream – ½ cup
- Butter – 2 ounces
- Egg yolk – 2 beaten
- Dry sherry – 2 tbsp
- Lobster – 1 pound cooked and cut into pieces
- Salt – ½ teaspoon
- Ground nutmeg – a pinch
- Cayenne pepper – a pinch
Use a small bowl to blend the egg yolk and cream. Melt butter in a saucepan, add egg yolk and sherry. Let it simmer. Remove from the stove and add the pepper and spices. Return to stove. Stir and cook over low heat. Remove and serve with sliced toast.
Lobster Thermidor

- 1½ pounds of cooked lobster meat
- Butter – 2 tbsp
- Fresh lemon juice – 1 tbsp
- Small onion – 1 chopped
- Hot English mustard – ½ tbsp
- 1½ cup fish stock
- ¼ cup white wine
- Parsley – 2 tbsp freshly chopped
- Salt – 1 pinch and pepper freshly ground to taste
- Parmesan cheese – ¼ cup freshly grated
Clean and cut lobster in half. Remove the meat from the tail and claws. Remove meat in the head and cut all the meat. Place this meat back into the shell.
